does anyone have the california state high school wrestling championships on dvd?

Professionally, commercially unfortunately no. Fox sports holds the video rights and they had no video available for 2009, 2010 or 2011.
Gametapes may still have 2005-2008.

2005 CIF State Wrestling Tournament
CIF 2006 State Wrestling
CIF Wrestling 2007
CIF Wrestling 2008
(Although all searches did not produce any results.)
